Turkey Chowder

Do you still have any turkey left from Thanksgiving? If you do you're probably pretty sick of turkey by now. You can still make a truly delicious soup out of it and it won't remind you of Thanksgiving dinner at all. Easy and delicious. I love it.

Turkey Chowder

6 potatoes, peeled and diced
1 cup julienned carrots
1 cup frozen corn (or fresh if you have it)
chicken broth
1 (10.75-ounce) can cream of celery soup
2 tablespoons sugar
2 cups heavy cream
2 or 3 cups diced turkey
onion salt
pepper

Place potatoes, carrots and corn in pan and add enough chicken broth to cover the potatoes. Use chicken bouillon and water. You can use just plain water, if you don't have chicken broth or bouillon, but chicken broth is definitely better than water. Cook until the potatoes are really soft and start to fall apart. Add soup, cream and turkey. Heat through. Add onion salt and pepper to taste. Don't be stingy with the pepper.

Mmmmm...doesn't that sound good? It really is soooo good. AND...you can freeze if for later if you just can't bear to eat turkey anything for a minute. Simple and delicious. How marvelous.
