Candied Carrots

The favorite side dish at my house, especially according to Sam and Lani, is Candied Carrots. Simple to make and so very delicious. Buttery and sweet....ahhhhhh so good! Delicious served with so many things!

Candied Carrots

1 (2-pound) package carrots
1 teaspoon salt
1 teaspoon sugar
1/2 cup butter
1/2 cup packed brown sugar

Peel and slice carrots. Place in a pan and cover with water. Add salt and sugar. Bring to a boil, reduce heat to medium and boil gently for about 20 minutes or until carrots are very soft. Drain. In the same pan, heat butter and brown sugar until melted and bubbly. Remove from heat. Immediately pour carrots back into pan. Stir to coat. 6 servings.
