Want to try something fun and simple and yummy for an April Fool's Day? Try this amazing pie recipe. It really does taste just like apple pie, but there is nothing close to an apple in it. It is so simple to make, simple ingredients, no peeling apples. Mysteriously delicious!







Mock Apple Pie

Pastry for two-crust 9-inch pie 
36 RITZ Crackers, coarsely broken (about 1 3/4 cups crumbs) 
1 3/4 cups water 
2 cups sugar 
2 teaspoons cream of tartar 
2 tablespoons lemon juice 
1 teaspoon grated lemon peel 
2 tablespoons butter 
1/2 teaspoon cinnamon 

Roll out half the pastry and line a 9-inch pie plate. Arrange crackers in a prepared crust; set aside. In a saucepan over high heat, combine water, sugar and cream of tartar. Simmer for 15 minutes, then add lemon juice and lemon peel. Allow to cool. Pour syrup over cracker crumbs. Dot with butter and sprinkle with cinnamon. Top with remaining pastry crust. Make slits in the top crust. Bake at 425 degrees for 30 to 35 minutes or until crust is golden brown. Allow to cool. Makes 10 servings.
