Baby Food Carrot Cake Recipe

No grated fingernails with this carrot cake. My dad's secretary gave me this recipe years ago. It is easy and soooo delicious. Just keep these ingredients on hand because you never know when the craving will strike!


Baby Food Carrot Cake Recipe

2 C sugar
4 eggs
1 1/3 C vegetable oil
3 - 4 oz bottles strained carrots (yep baby food)
1 sm can crushed pineapple - drained
2 C flour
2 tsp soda
1 tsp salt
1 tsp cinnamon
1 C chopped nuts
1 tsp vanilla

Cream together sugar, eggs and oil then stir in pineapple and carrots. Mix dry ingredients together in large bowl. Stir in wet ingredients til well blended, then stir in nuts. Bake in 9x13 pan at 350° for 45 minutes.When cake is cool, spread with cream cheese frosting.

Cream Cheese Frosting

1- 8 oz. cream cheese
5 T butter
few drops of cream
few drops of vanilla
Powdered sugar til thickness desired

  1. This sounds really good, but we're not fans of pineapple. Would you adjust any measurements or cooking time if you omitted it, or replaced it with something like raisins? Thanks.

  2. I have never tried this but think if you replaced the pineapple with 3/4 C of applesauce it would keep the cake moist and delicious
