Three Chocolates Snack Cake


Ready for a crazy, wonderful, easy recipe? Three Chocolates Snack Cake is it! Three ingredients, all 3 are chocolate.


chocolate cake mix
chocolate pudding mix
chocolate chips


Yep. That's it. Well, unless you count the milk that you'll need to make the pudding. But milk isn't chocolate so we are going to cheat a little and say 3 ingredients. Besides, how fun is Three Chocolates plus Milk Snack Cake for a title. Not. =)
 Make pudding. I make it in the microwave. Stir in the dry cake mix.
 Pour into a greased 9 x 13-inch pan.
 Top with chocolate chips. The more the better. =) The chocolate chips don't sink very far and are the "frosting" of this cake. Mmmmmm..... each bite has a few tiny nuggets of goodness! 

Three Chocolates Snack Cake
1 box chocolate cake mix
1 large box chocolate Cook and Serve pudding
1 1/2 cups chocolate chips

Make pudding according to package directions. (I made it in the microwave. Microwave instructions are on the side of the box.) Stir dry cake mix into hot pudding. Pour into greased 9 x 13-inch cake pan. Top with chocolate chips. Bake at 350 for about 40 minutes.

Now I know, I know, a cake disappears in minutes at your house. Not at mine because I only have one kid left at home. As disgraceful as this admission is, sometimes a whole big cake will not get eaten at all at my house. Yes, (gasp) I have thrown away old stale cake. Not because they don't like it, but because it gets stale and yuck by the time they can eat it all. I have discovered a solution!

Solution = Freeze it!! Cut the cake into serving sized pieces as soon as it cools. Leave some to eat today. Wrap each of the other pieces in plastic wrap. Tuck these wrapped pieces of cake in a gallon freezer bag. Stash the bag in the freezer. Now I can pull out a couple of pieces of cake when we feel like eating cake. We love this because: 

1. If I wrap it up and freeze it right away, the thawed cake is just as delicious as the first day I made it and certainly better than after day 3.

2. We don't have to eat the same cake for days. Maybe I'll make cookies or something different tomorrow and do the same thing. Then we have a variety.

3. I have fresh pieces of cake to tuck in Sam's lunch each day.
All wrapped up and ready for the freezer.
