Chocolate Covered Cherry Cake

One brownie mix, one cherry chip cake mix, one small box of cherry gelatin.

Brownie mix first. I filled a mini muffin tin and poured the remainder in a 9 x 13-inch pan.

Next comes the cherry chip cake made according to the box directions plus the dry cherry gelatin mixed in. I put the batter in a bottle to make it easy to fill the muffin cups.
Easy to control the amount in each. No mess. So easy.


Pour the remaining cake batter over the brownie batter.

They puff up cute and pretty and perfect.

Fudge frosting to finish it off. So delicious!

Chocolate Covered Cherry Cake. Dip a few cherries in chocolate sauce, if you like. It's just as great without them. I just think they are pretty. And I love maraschino cherries.

This is another recipe that freezes wonderfully. I served the mini cupcakes, each with a chocolate dipped cherry. I saved about a third of the cake to eat and wrapped the remainder of the cake in individual pieces. I put them in a gallon freezer bag. These are great in Sam's lunches. We also like to pull one from the freezer for a very close to fresh piece of cake whenever we feel like it.

These make it so easy and convenient to make and freeze this frosted cake.
Freeze it as as soon as it is cool and it will taste as good as the day it was made.
So easy to serve it later...even with only a moments notice.

Chocolate Covered Cherry Cake
1 brownie mix
1 cherry chip cake mix
oil, eggs and water as called for on the brownie and cake mixes
1 small box cherry gelatin (Jello)

Prepare the brownie mix according to the box directions. Add an extra egg to make the brownies more cake like. Pour batter into cupcake tins or cake pans, as desired. Since you are making 2 mixes, you'll have plenty of batter for one tin of mini muffins plus a 9 x 13-inch pan. You can divide the batter among whatever pans you like.

In a large bowl, combine the dry cake mix and the dry gelatin. Add remaining ingredients as called for on the box. Pour batter over the brownie batter. Bake according to cake mix instructions.

Top with:

Fudge Frosting
1/2 cup butter
6 tablespoons milk
1/4 cup cocoa
1 teaspoon vanilla
2 cups powdered sugar

Prepare frosting just before cake comes out of oven. In a small saucepan, combine butter, milk, and cocoa. Bring to a boil and remove from heat. Add vanilla and powdered sugar. Mix will. Spread over cake immediately. Frosting becomes fudge-like when it is cool.
