Sweet Pork Tacos

One of our favorite versions of tacos is this fabulous recipe for Sweet Pork Tacos. Scott and Erin are especially fond of them so I always make extra so I can be sure to send some home with them. This sweet pork also makes great burritos, quesadillas, enchiladas, and my favorite  - sweet pork salad. Doesn't matter if you use crisp corn tortillas or soft flour tortillas...the result is always so good! You'll want more than one even if you have to unbutton that top button. ;) 

Go ahead and make a whole slow cooker full because if you don't have anyone to share it with (or you just want to keep it all for yourself - and really...who could blame you) tuck it away in the freezer for another day. It freezes perfectly! Make it once...enjoy it many times!

Only a few ingredients required. A pork roast, a can of Pepsi (Coke or any other cola work just fine), brown sugar, hot sauce, and some salsa, if you like, although I will admit that I sometimes leave it out.
Cook the roast in the slow cooker until it falls apart easily. Shred, and add all the ingredients. Cook for a bit longer.
Pile it into tortillas (fresh corn tortillas, deep fried until cooked but still pliable are my favorite) and load them up with shredded lettuce and fresh sliced tomatoes. Tomatoes from the garden are the very best, but alas, there are none to be had yet but a nice red ripe hot house tomato will do for now. Then a lovely drizzle of Ranch Dressing and it is ready!

Sweet Pork Tacos
4 to 6 pound pork roast
1/2 cup hot sauce
1 12-ounce can Pepsi (any cola)
2 cups packed brown sugar
1/2 cup salsa, if desired

Cook pork roast in slow cooker on Low all day or until it falls apart easily. Remove from slow cooker, drain juices, remove any fat and bones. Shred and return to slow cooker. Add remaining ingredients and stir to combine. Continue to cook on Low for about 2 hours longer. Serve on your favorite tortillas and/or freeze for later.
