Ice Cream Cake

Sam calls this dessert, "Sour Ice Cream Cake."

It is really called Frozen Macaroon Dessert.

But.

 Sour Ice Cream Cake is a much more fun name.

At least that's the name that has stuck at our house.

Sam asks for this dessert for his birthday "cake" every year.

Perhaps that's why he calls it cake.

Perhaps he calls it "sour" because the frozen lemonade concentrate gives it a delicious, irresistible twang. The combination of vanilla ice cream and lemonade concentrate is creamy and sweet and tart and oh, so delicious! When I've served it those who have never tasted it before, they usually ask if it is cheesecake. 

There are only 3 ingredients in this light, easy, delicious dessert.
Frozen lemonade concentrate, Macaroon cookies, vanilla ice cream.

Let the ice cream soften a bit and put it in a bowl with the lemonade concentrate.
Using the beaters of an electric mixer, mash the ice cream apart a bit so that you can mix it with the mixer. If you start mixing with the ice cream in a block it is difficult to do.

Mix the ice cream and lemonade concentrate till smooth and creamy.
Lick the beaters. =D

Put all the cookies in a gallon bag.

Push down on the cookies with your hands to break cookies into pieces.

Choose your weapon. Rolling pin. Meat mallet. Can of food.

Crush the cookies into crumbs. Pour the crumbs into a dish and even them out.
You could save some crumbs for the top, if you like.

Drop the ice cream by spoonfuls onto the crumbs.
The crumbs shift easily so you'll want to do this gently.

After all the ice cream is dropped onto the crumbs, carefully smooth it out, edge to edge.
If you saved crumbs for the top, sprinkle them on the top now.

Cover the dish with foil, and tuck it in the freezer for a few hours or overnight.

Cut in squares and serve up the deliciousness.
You could drizzle with chocolate syrup, if you like, or enjoy it just as it is.

Sam always asks for Sour Ice Cream Cake for his birthday.
This birthday, his 17th, was no different.
Isn't he cute?

Shh! Don't tell him I said that.


I put chocolate syrup in a squeeze bottle with a long tip so I could write on his "cake."
He wanted to put the candles on. =D Silly boy.
