Caramel Popcorn

Ooey gooey sticky deliciousness. Only a few ingredients and a few minutes is all you need for this simple family treat. Whip it up and your kids will think you are the hero. But they already think that, don't they? :)

WMake the caramel in a saucepan on the stove. You don't need a thermometer or anything fancy. Just some brown sugar, butter, corn syrup (Karo), vanilla, and a can of sweetened condensed milk.
Pop up your favorite brand of popcorn.
Cute bowls to serve it in are a plus.
Pour the caramel over the pop corn.
Stir it up and gobble it up.
Lick your fingers.

Caramel Popcorn
2 cups brown sugar
1 cup corn syrup (Karo)
1/2 cup butter
2 tablespoons vanilla
1 can sweetened condensed milk

In a saucepan, combine the brown sugar and corn syrup. Boil for 3 minutes. Stir in butter, vanilla, and sweetened condensed milk. Pour over popcorn and stir until popcorn is coated.

This much caramel will coat about 3 to 4 bags of microwave popcorn. Pour the popcorn into a big bowl, but reserve some. Add the caramel and coat. Continue to add popcorn until it is coated the way you like. Some like the caramel thick and others like a thinner coating of caramel on their popcorn. I like it thick and gooey so I don't add all that popcorn at once. 

This caramel will keep, covered, in the refrigerator. Depending on how many are waiting to eat it, we make 2 bags of popcorn, pour on about half the caramel and store the rest in the refrigerator for next time. The coated popcorn doesn't keep very well. Although truthfully that is just a theory since we never have any left!
