Looking for something cute and green to serve for St. Patrick's Day?
I'm planning to serve this delicious Asparagus Soup with shamrock biscuits
and sweet sugar biscuits for a tidbit of sweet to finish the meal.
Sigh. I cannot turn this picture. Tried and tried. I need a leprechaun.
Sideways picture aside, this is a wonderful soup. Sort of like potato soup
but so much more.
Asparagus Soup
1 small onion, chopped
2 tablespoons butter
3 cups water
1 cup matchstick carrots
1 1/2 cups cubed potatoes
1/2 bunch of asparagus, cut in 1" inch pieces
3 tablespoons white rice
2 cups whole milk (or cream)
In a large saucepan, cook onion in butter until soft but not browned. Add water, carrots, potatoes, asparagus, and rice. Bring to a boil. Turn down heat, cover and simmer for about 20 minutes until potatoes and asparagus are tender. Add milk (or cream). Serve with shamrock biscuits.
Start with a can of refrigerated biscuits. Regular size.
You could use the big ones. They'll turn out bigger. =)
Cut each biscuit into four pieces.
Put green sugar in a bowl.
Take one quarter of a biscuit...
Press the top corners in gently, just enough to make a shamrock petal.
Dip the top in the green sugar.
Arrange on a baking sheet. One can hold 10 biscuits. I sugared 5 biscuits.
I painted the other 5.
Drip 3 drops of green food coloring in a small bowl. Add 3 drops of water.
You could add a tablespoon of melted butter instead.
Paint the tops of the shamrocks.
Bake 'em according the directions on the can and they puff up just like regular biscuits. Magic. =)
Perfect to serve with soup. Especially Asparagus Soup.
Sugared biscuits. A lovely ending to a lovely green St. Patrick's day meal.
