White Bean Chili Recipe

Pin ItThe other day it was raining and down right chilly, so I thought it a good night to whip up some of my daughter's famous White Bean Chili. It makes a large batch to more than feed the family and the left overs freeze up beautifully as freezer meals that can be eaten on another chilly, but busy night. I freeze the chili in one bag and the grated cheese in another.


Leissa's White Bean Chili Recipe


2 onions, chopped
4 cloves garlic, minced
4 cooked, boneless skinless chicken breasts torn into bite size pieces
32 oz carton chicken broth
2 - 4 oz cans canned chopped green chiles
2 teaspoons ground cumin
2 teaspoons dried oregano
1 1/2 teaspoons cayenne pepper
5 (14.5 ounce) cans great Northern
beans, undrained
2 C shredded Monterey Jack cheese



 Place all ingredients but cheese into large crock pot. Heat for 4-6 hours on low.
 Ladle into individual bowls and top with the cheese.
