Don't you just love this time of year when the fresh produce is so plentiful. I mean the kind you can get at the Farmer's Market or at the farm stand at the side of the road or even from your own bountiful garden. It all tastes so much better when ripened on the vine and brought in straight from the source.
Gorgeous shredded red cabbage.
Perfect fresh sliced cucumbers.
Vine ripened bright red tomatoes. Straight from the garden is best!!!
Sliced red onion.
Even the shredded carrots taste better straight from the garden.
Pile it all on top of some lettuce (I like it cut up small so I don't have to fight with it to get it onto my fork. Sprinkle each with a little salt and as much pepper as you like. I like pepper a lot. Top it all with some finely shredded Monterrey Jack cheese. I even pepper the cheese. Serve with some lovely Thousand Island Dressing. Need a recipe? Here's one you will love.
Don't forget to add more pepper!
