Onion Poppy Seed Bread
Almost bread, it's really more like a biscuit but make it in a pan like bread and slice it or cut it in serving sized pieces. Oh my it is so so so so good. Buttery and cheesy and delicious. Perfect to serve with your favorite soup. 

Chop up some onion. I like it really small so the flavor gets spread out into every bite. It's really diced, almost minced. You could mince it, if you like.

Cook the onion in a little butter until it is really soft but don't let it get brown. Brown is okay, too, but I like it best when the onion is soft and getting sweet.
Whisk an egg until completely mixed and nice and frothy.
Mix up the biscuit mix (I use Bisquik), milk and the beaten egg.
Stir it up but don't be too worried about getting it all smooth. Lumpy and a little dry in places is actually good. Just stir it up until mostly moistened.
Add the cheese and those delicious onions you just cooked up.
Spray a pan and spread out the dough. Sprinkle with poppy seeds and shredded cheese. Drizzle it all with melted butter.
Bake it and look at this golden brown deliciousness!
Delicious enough to be served all alone.
But oh is it ever good served with Green Chile Chicken Soup.
Bake it in a disposable foil pan and there will be no pan to wash!
Make two pans and freeze one for later. I put the lid on the pan before it is completely cool and pop it in the freezer. Later when you want to serve it, it thaws quickly and tastes just as good as the day it was made. Warm it for a few seconds in the microwave, if you like. You can find 9 different sizes of these pans here. You can bake it, freeze it, and warm it in the microwave, all in the same pan!!

2 tablespoons butter
1 cup chopped onion
1 1/2 cups biscuit/baking mix
1 egg, lightly beaten
1/2 cup milk
1/2 cup shredded sharp Cheddar cheese
1 tablespoon poppy seed
1/2 cup shredded sharp Cheddar cheese
2 tablespoons melted butter

Melt butter in a small skillet. Add chopped onion. Cook and stir until onion is soft and golden. In a mixing bowl, combine biscuit/baking mix, beaten egg and milk just until moistened. Stir in onion and 1/2 cup shredded cheese. Spread dough in a greased 9-inch round baking pan. Sprinkle poppy seed and 1/2 cup shredded cheese over top of dough. Drizzle with melted butter. Bake at 400 for 20 to 25 minutes. 8 servings.
