Here come the blustery days. Overcast, windy, rainy, cold. Perfect time for making soup. Actually, the truth is I love this soup any time of year, but it's especially delicious when it's cold outside.

This soup is light and savory and delicious. Packed with flavors that make you want to lick the bowl clean. It's quick and easy to make and freezes beautifully. I usually make as much as my pot will hold, eat some, freeze enough for a meal or two for the family in the future and I freeze some in individual serving sized bowls so I can have just one bowl whenever I like.



Green Chile Chicken Soup

4 cups chicken broth
3 cups cooked, chopped chicken
1 (16-oz) bag frozen corn
1/2 teaspoon cumin
1 teaspoon minced garlic
2 teaspoons chicken bouillon
1 (4-oz) can diced green chiles
1 cup cream
1 teaspoon salt
1/4 teaspoon pepper

Combine it all and heat just until it is starting to bubble. Serve with sour cream and corn chips or tortilla chips. Eat it with diced avocado or even with this Corn, Tomato, and Avocado Goodness. O my....so good!

If you want to freeze some for later, there is no need to even make it hot. Just combine all the ingredients in a bowl. Fill the freezer bags or freezer bowls as you like, label, and off they go to the freezer. No need to make it hot....no need to wait for it to cool. Just combine and freeze. Making this a wonderfully easy freezer meal.
