Brenda's Summer Salad

My sister-in-law, Brenda, lives far, far away from me in the desert of Arizona but thanks to the wonders of Facebook, I get little glimpses into her life and (sort of) know what's going on in her life. I love this about Facebook. A few days ago, Brenda posted that she was making a lovely, delicious summer salad and that she was just waiting for it to cool so she could have it with (for?) her dinner that night. I was intrigued by the "waiting for it to cool" part, and I am always interested in a new recipe so I asked for (demanded?) the recipe from her. ((sheepish grin))

She shared with me, I shall share with you. It really is a wonderful, sort of sweet, sort of tart, completely delicious summer salad. And completely worth waiting for it to cool. =) Thank you, Brenda...you da bomb!





Brenda's Summer Salad


1 can small peas, drained (I used frozen)
1 can white corn, drained (I used frozen)
1 can French cut green beans, drained
1 cup chopped celery
1 cup chopped onion
1 cup chopped green pepper
3/4 cup vinegar
1 tablespoon water
2/3 cup salad oil
1 teaspoon salt
1/2 teaspoon pepper
1 cup sugar


Combine the vegetables in a bowl. Look how pretty...
Combine the remaining ingredients in a small saucepan. Whisk it all together and bring to a boil.
Now comes the hard part. Allow the dressing to completely cool. Maybe you'll call it cheating but I poured it in a glass dish and put it in the freezer to speed up this part!

When it is completely cool pour it over the vegetables, mix and enjoy. It is actually even better if it is cold. The dressing is so good I wanted to drink it. Mmmmm.....the only thing I will do differently next time is add some peeled, quartered and sliced cucumber. And maybe I'll leave out the green beans.

When I "talked" to Brenda last, she said she added potatoes and black olives to hers. Such a versatile and deliciously refreshing salad to make for lunch or to feed the family for or with dinner. Add what you like....and enjoy!

  7. With all the fresh produce coming out of the garden, this salad recipe would be great to put together and can, so it could be enjoyed during the cold winter months.
